| "Natural Ovens of Manitowoc was founded in 1976 by Paul Stitt, M.S. (biochemistry, University of Wisconsin) because he saw a need for fresh, filling and satisfying, preservative-free whole grain food in the Midwest. As scientists discovered more and more about the dangers of chemical additives, preservatives, and "junk food" diets, Paul became increasingly concerned about the health of his family... and the nation. The first step in our bakery process involves selecting the highest quality, most nutritious wheat available. The wheat flour is delivered to our bakery three times a week, just hours after it is milled. The breads begin with a starter dough which rises for two to three hours. Ingredients such as ground flax, wheat germ, vitamins and minerals are added at this point. After a second rising, the dough is then weighed and formed into loaves. The loaves are placed into the proof box, which provides a warm, moist environment for the bread to rise for the third time. This long, slow method of making bread greatly improves the flavor, makes the vitamins and minerals more readily available, and increases the B vitamin content as the yeast grows. Our hearth oven is 106 feet long and will bake 3,000 loaves per hour. Natural Ovens breads are delivered to over 1,200 grocery stores in less than twenty-three hours after we start making them! Free guided bakery tours are offered Monday, Wednesday, Thursday and Friday at 9am, 10am and 11am. Please phone ahead for the tour schedule during a holiday week. Munch on fresh, warm bread samples as you see how our products are made. Learn the story behind our company and our large stained glass window. We also have a small gift shop with our products, cookbooks and other items we think you'll find interesting. The Natural Ovens Farm and Food Museum is located on the property directly adjacent to the bakery. Stroll down the beautiful winding flower garden that connects the bakery with the Farm Museum. Brochures are available to lead you on a self-guided tour. You will find many antique farm implements. Featured is Paul's extensive collection and love of John Deere tractors. Children of all ages are permitted to climb on the tractors. Everyone will enjoy meeting the sheep, goats, llamas, donkeys, and chickens as well as watching our beautiful Belgian horses frolic in their pasture. A total of nine buildings and our small heirloom apple orchard round out your tour. The Farm and Food Museum is open May through October, Monday through Saturday, from 9am to 3pm." |
